The Fine Dining Industry is constantly evolving. With its evolution, we are seeing many new changes and trends popping up within the field. One major trend that has arisen recently involves sommeliers and retailing wine.
Many customers fall in love with a particular wine at a restaurant, but they are often unlikely to find the wine in a store. Some would like to buy the wine for home, or to give to friends and bring to parties. With that in mind, some restaurateurs are obtaining special permits to allow them to sell their wine at retail to their guests.
This allows the customer much more freedom and choice. They have shown to become loyal customers, and they still enjoy the wine at the establishment, as well as their own homes.
I think this is a great article describing the market for people who like to dine out as well as carry the expeirence outside of the establishment and carry it throughout the night. Being able to sell a guest a selected bottle of wine to take home after diner is a great niche for a concept. This also must bring in new customers from word of mouth when a guest shares a bottle of the wine with a freind or has it at a dinner. The marketing aspect of this must help the restaurant alot by being one of the few to offer these accomadations to their guests. This is also a way for the establishment to connect to their guests and sell them something that the restaurant can make extra money on while satisfiing the guest.
ReplyDeleteI think this is a fast growing concept. Many restaurants already offer this feature, including chain restaurants such as The Olive Garden. I was there about a month or so ago, and I had this amazing Muscato. My friend and I had a bottle with dinner, and bought two more to take home. This greatly improves restaurant's buzz factor. If you can go somewhere and have a delicious bottle of wine that you cant find in liquor stores, you can simply purchase it from the restaurant. Some restaurants even allow you to take home partial bottles as well; so if you drink half the bottle with dinner, you can take the rst with you. It is a great concept to try and regain market share in an economy where fine dining is an ever growing luxury, rather than an everyday eatery.
